  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • Kosher or sea salt
  • Freshly ground black pepper
  • 1 pound lean pork cut into 3/4- to 1-inch pieces
  • Small skewers soaked in water for 30 minutes

Instructies

PREPARE SEVERAL HOURS IN ADVANCE

    Marinate the Pork:

    • In a medium bowl, combine olive oil, dried thyme, ground cumin, smoked paprika, crushed red pepper, crumbled bay leaf, chopped parsley, salt, and black pepper.
    • Mix well.
