- 1 pint grape tomatoes halved
- 1 small red onion thinly sliced
- ½ cup chopped dried apricots
- 1 ripe avocado peeled and diced
- ½ cup chopped pecans toasted
- Apricot Vinaigrette
Instructies
- Place first 6 ingredients in a large bowl, tossing gently.
