Ingredients

  • 1 pound 455 g shelled edamame
  • 1 can 15 ounces, or 425 g mandarin oranges in light syrup
  • 1 red bell pepper cored, seeded, and diced
  • ¼ cup 60 ml extra-virgin olive oil
  • ¼ cup 60 ml soy sauce or tamari
  • 1 tablespoon 15 g red pepper flakes

Instructions

  • Add all ingredients to a pot and bring to a boil.
  • Reduce heat to a simmer and cook, uncovered, for 20 minutes, or until the edamame is fork-tender.
