Sweet and Spicy Edamame with Mandarin Oranges

Ingredients
- 1 pound 455 g shelled edamame
- 1 can 15 ounces, or 425 g mandarin oranges in light syrup
- 1 red bell pepper cored, seeded, and diced
- ¼ cup 60 ml extra-virgin olive oil
- ¼ cup 60 ml soy sauce or tamari
- 1 tablespoon 15 g red pepper flakes
Instructions
- Add all ingredients to a pot and bring to a boil.
- Reduce heat to a simmer and cook, uncovered, for 20 minutes, or until the edamame is fork-tender.
