Sweet Pickle-less Relish

A tropical twist on traditional pickle relish, this sweet and fresh combination of mango, pineapple, and roasted red pepper adds flavor to hot dogs, burgers, and more!

Equipment

Ingredients

  • 2 tablespoons 30 ml lemon or lime juice
  • 5 ounces 140 g diced pineapple
  • 6 ounces 170 g diced mango
  • 1 ounce 28 g chopped fresh cilantro leaves
  • 3 ounces 85 g diced red onion
  • 1 tablespoon 13 g granulated sugar
  • 4 ounces 112 g diced roasted red pepper
  • 2 ounces 56 g diced scallion

Instructions

  • Toss all the ingredients together in a mixing bowl until well combined.
  • Transfer to an airtight container and refrigerate until ready to serve.
  • Use as a topping for hot dogs, burgers, or in chicken-less salads.
