Ingrediënten

Ingredients for 2 servings:

  • 300 g sweet potatoes
  • 3 tablespoons olive oil
  • Salt pepper
  • ½ onion
  • ½ clove of garlic
  • 1 tablespoon pine nuts
  • ½ pack 400 g each chunky tomatoes
  • 2 stalks of sage
  • ½ Pck. 500 g each Gnocchi (refrigerated)
  • 50 g young spinach leaves
  • 20 g parmesan cheese piece

Instructies

  • Peel the sweet potatoes and cut into 1 cm cubes then mix with 1 tablespoon of oil, salt and pepper and bake in the oven at 180 ° C for 20 minutes.
  • Peel onion and garlic and chop finely.
  • Roast the pine nuts in a pan without fat.
  • Heat 2 tablespoons of oil in a saucepan.
  • Sauté the onion and garlic cubes until translucent.
  • Add tomatoes, bring to the boil and simmer for about 10 minutes.
  • Wash the sage, put it in the saucepan and season everything with salt and pepper.
  • Cook the gnocchi according to the instructions on the packet.
  • Wash the spinach and spin dry.
  • Drain the gnocchi, mix with the sweet potatoes, pine nuts, sauce and spinach and grate the parmesan over the top.
