Ingredients for 2 servings:
Peel the sweet potatoes and cut into 1 cm cubes then mix with 1 tablespoon of oil, salt and pepper and bake in the oven at 180 ° C for 20 minutes.
Peel onion and garlic and chop finely.
Roast the pine nuts in a pan without fat.
Heat 2 tablespoons of oil in a saucepan.
Sauté the onion and garlic cubes until translucent.
Add tomatoes, bring to the boil and simmer for about 10 minutes.
Wash the sage, put it in the saucepan and season everything with salt and pepper.
Cook the gnocchi according to the instructions on the packet.
Wash the spinach and spin dry.
Drain the gnocchi, mix with the sweet potatoes, pine nuts, sauce and spinach and grate the parmesan over the top.
