Sweet Potato-Pecan Pancakes

Ingrediënten

Makes 21 (4-inch) pancakes

Prep: 10 min., Cook: 24 min.

  • cups mashed cooked sweet potato
  • 2 large eggs
  • ¼ cup sugar
  • ¼ cup butter melted
  • 1 teaspoon vanilla extract
  • cups milk
  • cups all-purpose baking mix
  • ½ cup chopped pecans toasted

Toppings:

  • softened butter
  • orange marmalade
  • chopped pecans
  • maple syrup

Instructies

  • Whisk together first 5 ingredients in a large bowl until blended.
  • Gradually whisk in milk.
  • Stir in baking mix and pecans just until blended.
  • Pour about ¼ cup batter for each pancake onto a hot, lightly greased griddle or large skillet.
  • Cook pancakes 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked; turn and cook other side.
  • Serve with desired toppings.
