Sweet Potato-Pecan Pancakes

- 1¼ cups mashed cooked sweet potato
- 2 large eggs
- ¼ cup sugar
- ¼ cup butter melted
- 1 teaspoon vanilla extract
- 1½ cups milk
- 2½ cups all-purpose baking mix
- ½ cup chopped pecans toasted
Toppings:
- softened butter
- orange marmalade
- chopped pecans
- maple syrup
Instructies
- Whisk together first 5 ingredients in a large bowl until blended.
- Gradually whisk in milk.
- Stir in baking mix and pecans just until blended.
- Pour about ¼ cup batter for each pancake onto a hot, lightly greased griddle or large skillet.
- Cook pancakes 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked; turn and cook other side.
- Serve with desired toppings.
