Sweet Potato-Pecan Pancakes

mashed cooked sweet potato

all-purpose baking mix

chopped pecans
toasted
Toppings:
▢
softened butter
▢
orange marmalade
▢
chopped pecans
▢
maple syrup
Instructies
Whisk together first 5 ingredients in a large bowl until blended.
Gradually whisk in milk.
Stir in baking mix and pecans just until blended.
Pour about ¼ cup batter for each pancake onto a hot, lightly greased griddle or large skillet.
Cook pancakes 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked; turn and cook other side.
Serve with desired toppings.
