Tex-Mex Sauce
This sauce also dresses up grilled pork tenderloin or chicken.

- 1 small onion chopped
- 1 teaspoon vegetable oil
- 3 garlic cloves minced
- ¾ teaspoon chili powder
- ¼ teaspoon ground cumin
- 1 14.5-ounce can petite diced tomatoes, undrained
- ½ teaspoon sugar
- ¼ teaspoon salt
- 1½ tablespoons fresh lime juice
- 3 tablespoons vegetable oil
- 2 tablespoons chopped fresh cilantro
Instructies
- Sauté chopped onion in 1 teaspoon hot oil 5 minutes or until tender.
- Add minced garlic, chili powder, and ground cumin; sauté 1 minute.
- Add petite diced tomatoes, sugar, and salt; simmer 5 minutes or until warm.
- Process tomato mixture in a blender or food processor 20 seconds or until smooth, stopping to scrape down sides.
- Stir in fresh lime juice, 3 tablespoons oil, and chopped fresh cilantro.
