Tex-Mex Sauce

This sauce also dresses up grilled pork tenderloin or chicken.

Ingrediënten

Makes about 1 cup

  • 1 small onion chopped
  • 1 teaspoon vegetable oil
  • 3 garlic cloves minced
  • ¾ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • 1 14.5-ounce can petite diced tomatoes, undrained
  • ½ teaspoon sugar
  • ¼ teaspoon salt
  • tablespoons fresh lime juice
  • 3 tablespoons vegetable oil
  • 2 tablespoons chopped fresh cilantro

Instructies

  • Sauté chopped onion in 1 teaspoon hot oil 5 minutes or until tender.
  • Add minced garlic, chili powder, and ground cumin; sauté 1 minute.
  • Add petite diced tomatoes, sugar, and salt; simmer 5 minutes or until warm.
  • Process tomato mixture in a blender or food processor 20 seconds or until smooth, stopping to scrape down sides.
  • Stir in fresh lime juice, 3 tablespoons oil, and chopped fresh cilantro.
