Thai Pasta With Chicken

Makes 4 servings / Prep: 15 min., Cook: 14 min.

  • 12 ounces linguine
  • ½ cup chicken broth
  • 3 tablespoons seasoned rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon minced fresh garlic
  • ½ teaspoon ground ginger
  • ½ teaspoon dried crushed red pepper
  • 1 10-ounce package roasted chicken, coarsely chopped
  • cup minced fresh cilantro
  • ¼ cup chopped dry-roasted peanuts

Instructies

  • Cook the pasta according to package directions.
  • Drain and keep warm.
  • While pasta cooks, combine broth and next 6 ingredients in a small saucepan.
  • Cook over medium heat until mixture comes to a simmer, stirring occasionally.
  • Add the broth mixture to warm pasta; stir well.
  • Add chicken and cilantro; toss gently.
  • Sprinkle with peanuts.
