Tuna Croquettes
Traditionally, croquettes are a fried delicacy; the word croquette comes from the French word croquer, which literally means “crunch.” With the air fryer, however, you’ll get all the crispness without the deep-fried fat and carbs. Also, don’t discard your celery leaves — chop them up and serve them over your croquettes, or add them to a salad at a later date!

- 340 grams canned tuna in water drained
- ⅓ cup mayonnaise
- ¾ tablespoon minced fresh celery
- 2 teaspoons dried dill divided
- 1 teaspoon fresh lime juice
- 1 cup crushed pork rinds divided
- 1 large egg
- 1 teaspoon prepared horseradish
Instructies
- Preheat air fryer at 190°C for 3 minutes.
- In a medium bowl, combine tuna, mayonnaise, celery, 1 teaspoon dill, lime juice, ¼ cup pork rinds, egg and horseradish.
- Form mixture into 12 rectangular mound shapes (about 2 tablespoons each).
- Roll each croquette in a shallow dish with remaining crushed pork rinds.
- Place six croquettes in air fryer basket lightly greased with olive oil.
- Cook for 4 minutes.
- Gently turn one third.
- Cook for an additional 4 minutes.
- Gently turn another third.
- Cook for an additional 4 minutes.
- Transfer cooked croquettes to a large serving dish.
- Repeat cooking with remaining croquettes and garnish with remaining dill.
- Serve warm.
