Veggie and Turkey Meatballs
This healthy recipe is great as a side dish. Mix up a big batch and
use them as a side dish all week!
Ingrediënten
- 2 pounds of lean ground turkey
- 1 cup panko Japanese breadcrumbs
- ¼ cup of carrots finely chopped
- ¼ cup of zucchini finely chopped
- ¼ cup of onion finely chopped
- 2 large eggs
- 2 tablespoons of Italian seasoning
- 1 tablespoon of sea salt
- 2 tablespoons of olive oil
- ¾ cup of chicken broth
Instructies
- Mix the first 8 ingredients in a large bowl until combined thoroughly.
- Shape the mixture into 1-inch meatballs.
- Heat the olive oil in a large skillet over medium heat.
- Add the meatballs and cook until browned. Turn frequently.
- This should take about 7 minutes.
- Add ½ cup of chicken broth.
- Cover and reduce the heat.
- Cook until the liquid is nearly absorbed, usually about 7 minutes.
- Add remaining broth and increase heat to medium.
- Cook uncovered until the liquid is absorbed.
- Serve and enjoy!
