Veggie and Turkey Meatballs

This healthy recipe is great as a side dish. Mix up a big batch and use them as a side dish all week!

Ingrediënten

  • 2 pounds of lean ground turkey
  • 1 cup panko Japanese breadcrumbs
  • ¼ cup of carrots finely chopped
  • ¼ cup of zucchini finely chopped
  • ¼ cup of onion finely chopped
  • 2 large eggs
  • 2 tablespoons of Italian seasoning
  • 1 tablespoon of sea salt
  • 2 tablespoons of olive oil
  • ¾ cup of chicken broth

Instructies

  • Mix the first 8 ingredients in a large bowl until combined thoroughly.
  • Shape the mixture into 1-inch meatballs.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the meatballs and cook until browned. Turn frequently.
  • This should take about 7 minutes.
  • Add ½ cup of chicken broth.
  • Cover and reduce the heat.
  • Cook until the liquid is nearly absorbed, usually about 7 minutes.
  • Add remaining broth and increase heat to medium.
  • Cook uncovered until the liquid is absorbed.
  • Serve and enjoy!
