Veggie and Turkey Meatballs
This healthy recipe is great as a side dish. Mix up a big batch and use them as a side dish all week!

Ingrediënten

of lean ground turkey

cup
panko
Japanese breadcrumbs

cup
of carrots
finely chopped
▢
¼
cup
of zucchini
finely chopped
▢
¼
cup
of onion
finely chopped
▢
2
large eggs
▢
2
tablespoons
of Italian seasoning
▢
1
tablespoon
of sea salt
▢
2
tablespoons
of olive oil
▢
¾
cup
of chicken broth
Instructies
Mix the first 8 ingredients in a large bowl until combined thoroughly.
Shape the mixture into 1-inch meatballs.
Heat the olive oil in a large skillet over medium heat.
Add the meatballs and cook until browned. Turn frequently.
This should take about 7 minutes.
Add ½ cup of chicken broth.
Cover and reduce the heat.
Cook until the liquid is nearly absorbed, usually about 7 minutes.
Add remaining broth and increase heat to medium.
Cook uncovered until the liquid is absorbed.
Serve and enjoy!
