Veggie Goulash

Ingrediënten

  • Olive oil: 1 teaspoon
  • Whole tomatoes peeled and chopped, reserve juice: 14.5 ounces
  • Red wine: ½ cup
  • Thin slices of medium onion: ½
  • Thinly sliced green bell pepper: 1
  • Dried oregano: 1 teaspoon
  • Tomato puree: 1 teaspoon
  • Mycoprotein pieces: 1 ounces
  • Chopped garlic: 1 clove
  • Sugar: 1 teaspoon
  • Pepper and salt: to taste
  • Paprika: 1 teaspoon

Instructies

  • Heat olive oil over medium flame in one skillet and sauté onions for 5 minutes to tender.
  • Stir in mycoprotein pieces and green pepper and sauté only five minutes to tender.
  • Stir in paprika and garlic.
  • Mix the tomatoes along with their juices in the skillet.
  • Stir in tomato puree, oregano, and wine.
  • Let this mixture boil.
  • Decrease heat to low and simmer for 25 minutes to make this mixture thick.
  • Before serving goulash, mix in sugar and season with pepper and salt.
