Equipment

  • Medium-size saucepan, Fork, Measuring cups, Measuring spoons

Ingredients

  • cups 260 g uncooked whole wheat couscous
  • 3 cups 705 ml soy or other nondairy milk
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 cup 109 g chopped pecans
  • ¾ cup 120 g raisins

Instructions

  • Combine all ingredients in a medium-size saucepan.
  • Cover with a tight-fitting lid, bring to a boil, then reduce heat.
  • Let simmer for 5 to 10 minutes, or until all the liquid is absorbed.
  • Fluff with a fork and divide into 6 portions.
  • Serve immediately, or allow to cool and freeze for later use.
  • If frozen, thaw individual portions overnight, microwave with a little nondairy milk, and add sweeteners or fresh fruit before serving.
