Whole Wheat Couscous Bowl of Comfort
A comforting, warm bowl of whole wheat couscous with a touch of cinnamon and vanilla—perfect for a hearty breakfast that’s customizable to your taste!
Equipment
- Medium-size saucepan, Fork, Measuring cups, Measuring spoons
Ingredients
- 1½ cups 260 g uncooked whole wheat couscous
- 3 cups 705 ml soy or other nondairy milk
- 2 teaspoons pure vanilla extract
- ½ teaspoon ground cinnamon
- 1 cup 109 g chopped pecans
- ¾ cup 120 g raisins
Instructions
- Combine all ingredients in a medium-size saucepan.
- Cover with a tight-fitting lid, bring to a boil, then reduce heat.
- Let simmer for 5 to 10 minutes, or until all the liquid is absorbed.
- Fluff with a fork and divide into 6 portions.
- Serve immediately, or allow to cool and freeze for later use.
- If frozen, thaw individual portions overnight, microwave with a little nondairy milk, and add sweeteners or fresh fruit before serving.
