Combine all ingredients in a medium-size saucepan.
Cover with a tight-fitting lid, bring to a boil, then reduce heat.
Let simmer for 5 to 10 minutes, or until all the liquid is absorbed.
Fluff with a fork and divide into 6 portions.
Serve immediately, or allow to cool and freeze for later use.
If frozen, thaw individual portions overnight, microwave with a little nondairy milk, and add sweeteners or fresh fruit before serving.
