Wilted Kale Salad with Shredded Beets and Carrots

Ingrediënten
- 2 bunches kale stemmed and coarsely chopped
- 1 avocado
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra-virgin olive oil
- ½ teaspoon sea salt
- 4 carrots shredded
- 2 unpeeled beets scrubbed and shredded
- ¼ cup pine nuts toasted
Instructies
- Put the kale in a large bowl.
- Scoop the avocado into the bowl and drizzle with the balsamic vinegar, oil, and salt.
- Using both hands, massage the avocado and dressing into the kale.
- It will start to take on a wilted appearance as it gets tender.
- Add the carrots, beets, and pine nuts.
- Toss well and serve.
