Line an 8-inch-square baking dish with parchment paper.
Grease a baking sheet with nonstick spray.
Toss the cooked quinoa with coconut oil and spread evenly over the prepared baking sheet.
Bake for 20 to 25 minutes, stirring halfway through, until golden and crispy.
Let cool completely.
