1package6 oz sliced Canadian bacon, coarsely chopped
2mediumcarrotscut into ½-inch pieces (1 cup)
1mediumpotatopeeled, cut into ½-inch pieces (1 cup)

1mediumstalk celerycut into ½-inch pieces (½ cup)
1teaspoondried thyme leaves
½teaspoonsalt

Instructies
Spray 3½- to 6-quart slow cooker with cooking spray.
In slow cooker, mix all ingredients.
Cover; cook on Low heat setting 8 to 9 hours (or High heat setting 3 to 5 hours) or until lentils are tender.
Stir well before serving.

Quick Variation:Canadian bacon is a closer relative to ham than to regular bacon. It’s lean and fully cooked. If you prefer ham, use 1½ cups chopped cooked ham instead of the Canadian bacon.
