Instructies
In a large pot or Dutch oven, heat the butter and olive oil over medium heat.
Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown (about 30-40 minutes).
Once the onions are caramelized, add the vegetable or beef broth, thyme, and bay leaf.
Bring to a simmer and cook for 10 minutes to blend the flavors.
Season with salt and pepper to taste.
While the soup simmers, preheat the oven to 200°C (400°F).
Place the slices of bread on a baking sheet and toast them in the oven until golden and crisp (about 5-7 minutes).
Ladle the soup into oven-safe bowls, top each with a slice of toasted bread, and sprinkle with Gruyère and Parmesan cheese.
Place the bowls under the broiler for 2-3 minutes or until the cheese is melted and bubbly.
