cannellini beans 2 cans
400g each, drained and rinsed

Carrot 1 medium

Celery stalks 2
diced
▢
Garlic 3 cloves
minced

Harissa paste 1-2 tbsp
adjust to taste

Honey 2 tbsp
▢
Olive oil 2 tbsp
▢
Onion 1 medium
diced
▢
Red pepper flakes 1/2 tsp
optional
▢
Vegetable or chicken stock 1 litre
▢
Salt and pepper to taste
▢
Fresh cilantro or parsley for garnish
Instructies
Heat olive oil in a large pot over medium heat.
Add onion, carrot, and celery, and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Stir in harissa paste and red pepper flakes (if using), and cook for 1 minute.
Add canned tomatoes, cannellini beans, and vegetable or chicken stock.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in honey and season with salt and pepper to taste.
If desired, use an immersion blender or transfer to a blender to partially blend the soup for a smoother texture.
Simmer for another 10 minutes.
Garnish with fresh cilantro or parsley before serving.
