This classic Southern spread of cheese, mayonnaise and pimientos is traditionally served in a sandwich or with crackers, but it makes the perfect filling for spicy jalapeño boats. Because the peppers are seeded, most of the heat is removed. If you like things spicy, though, mix the seeds in with the pimiento cheese to kick it up a notch!
Lay stuffed peppers in ungreased air fryer basket.
Cook for 8 minutes.
Transfer to a large serving plate and serve warm.

HOW TO MAKE PIMIENTO CHEESEThis cheese spread is super versatile — you can dip it, spread it, mix it or stuff it like we have with these Jalapeño Poppers. Just combine 450 grams of finely shredded Cheddar cheese with 1 (110 gram) jar pimientos including juice, ½ cup mayonnaise, ¼ teaspoon salt and ¼ teaspoon freshly ground black pepper. Refrigerate covered until ready to use.
