Although mashed potatoes are a staple dinner side, there are many vegetables that can replicate that creamy mouthful without the carbs. If you want to load this mash up, add some cooked bacon crumbles and grated Cheddar cheese and cook for another minute or two!
In a large bowl, toss cauliflower florets and swede with 1 ½ tablespoons melted butter and ½ teaspoon salt.
Place mixture in ungreased air fryer basket.
Cook for 5 minutes.
Toss mixture, then cook for an additional 5 minutes.
Add garlic.
Cook for another 5 minutes.
Using a stand blender or food processor, blend or pulse cooked ingredients with remaining butter, remaining salt, pepper, cream cheese and almond milk.
