Prep your salsa verde ahead of time and marinate the meat the night before so you are ready to roll when you come home from a busy day. And it can be in your bowl in less than 25 minutes
Place steaks in a large dish with 1 cup salsa verde.
Cover and marinate refrigerated for 1 hour up to overnight.
Preheat air fryer at 200°C for 3 minutes.
Place steaks in air fryer basket lightly greased with olive oil.
Cook for 6 minutes.
Flip and cook for an additional 5 minutes or until cooked to your liking.
Transfer steaks to a cutting board and let rest for 5 minutes, then thinly slice against the grain and transfer to four medium plates.
Serve warm with remaining ½ cup salsa verde.

How To Make Mexican Style Salsa VerdeThe hero ingredient in Mexican Salsa Verde is the Tomatillo. This nightshade looks like a mini green tomato with a husk. Fresh tomatillos are difficult to buy in Australia, but you can grown your own or used the canned variety to make a salsa verde. In a blender, combine 400g of canned tomatillos (drained and rinsed throughly) with ½ onion, 2 garlic cloves, 1 bunch of coriander and 1-3 jalapeños, depending on desired heat. Blend until smooth. Add salt to taste.
