Mushroom and Onion Pizza Rounds
Serve these low-carb pizza rounds alongside a fresh mixed green salad for a tummy full of healthy ingredients. If you don’t eat dairy, substitute with vegan mozzarella which you can find at your local supermarket.

small-diced baby Swiss brown mushrooms

no-sugar-added napolitana sauce

small eggplant
sliced into circles

teaspoon
salt
▢

shredded mozzarella

chopped fresh basil
Instructies
In a medium frying pan, heat 2 teaspoons olive oil over medium heat for 30 seconds.
Add onion and mushrooms.
Cook for 4 minutes until onion is translucent.
Add napolitana sauce and stir.
Remove from heat.
Preheat air fryer at 190°C for 3 minutes.
Rub remaining 2 tablespoons olive oil over both sides of eggplant circles.
Lay out slices on a large plate and season evenly with salt.
Top evenly with sauce mixture and shredded mozzarella.
Place half of eggplant pizzas in ungreased air fryer basket.
Cook for 5 minutes.
Transfer back to plate.
Repeat cooking with remaining pizzas.
Garnish pizzas with chopped basil and serve warm.
