On a flat, clean surface sprinkle 2 teaspoons erythritol over surface.
Place filo sheet over scattered erythritol.
Brush butter over sheet.
Sprinkle with remaining erythritol.
Flip dough.
Evenly spread lemon curd over sheet.
Carefully roll one end toward the middle of sheet.
Stop at the halfway point.
Roll opposite side toward the middle.
Refrigerate covered for 30 minutes.
Slice double log into 18 equal slices.
4 Preheat air fryer at 180°C for 3 minutes.
Place six palmiers in lightly greased air fryer basket.
Cook for 8 minutes.

Homemade Lemon Curd
Although lemon curd can be purchased jarred in most grocery stores, it can be easily made and is amazingly delicious. Combine 4 large egg yolks and ⅔ cup erythritol sweetener in a small pot over low heat. Whisk in ⅔ cup fresh lemon juice and 1 teaspoon fresh lemon zest. Slowly whisk in 3 ¾ tablespoons unsalted butter, ¾ tablespoon at a time. Stir continuously until combined and thickened. Strain through a sieve and store covered until ready to use for up to one week.
