Yeast Buns
Makes 3–31/2 dozen rolls

Ingrediënten

dry yeast

cup
lukewarm water
▢

cups
milk
▢

cup
lard or vegetable oil
▢
½
cup
sugar

–8 cups flour

salt
Instructies
Dissolve the yeast in the lukewarm water.
Set aside.
Scald milk and add the shortening and sugar to it.
Let cool to lukewarm, then add yeast mixture to it.
Beat in 3½–4 cups flour.
Let rest in warm place for ½ hour.
Beat in salt and remaining flour.
Knead on lightly floured surface until the dough is no longer sticky.
Let rise until double in bulk.
Punch down, then form into balls the size of a large walnut.
Place in a greased baking pan and let rise again until nearly double.
Bake at 400° for 15–20 minutes or until golden brown.
