Papaya Salad
Ensalada de PapayaMexican papayas have juicy flesh that is deep pink to red inside, and these large wonderful fruits, shaped somewhat like a flat football with yellowish skin, frequently show up in many United States markets. Try them as part of a fruit salad.

- 2 cups 1-inch papaya pieces
- 1 cup 1-inch pineapple pieces
- 1 ripe banana peeled and cut into 1⁄2-inch pieces
- 1 red apple unpeeled, cut into 1⁄2-inch pieces
- ½ cup seedless green grapes
- 1 tablespoon finely chopped fresh mint
- 1 teaspoon fresh lime juice
- ¼ teaspoon salt
- 4 mint sprigs
Instructies
- In a large bowl gently mix the ingredients together.
- Divide the salad among 4 glass serving bowls.
- Garnish each bowl with a sprig of mint.
