Salsa Vinaigrette
Vinagreta de SalsaVinaigrette madewith the ingredients typical to a salsa makes a lively dressing. Try it withtossed greens or even with one of my favorites, Mushroom and Avocado Salad.
Ingrediënten
Makes about 1 cup
- 1 large vine-ripened tomato peeled, seeded, and chopped
- 2 tablespoons chopped white onion
- 1 serrano chile chopped with seeds
- 2 tablespoons fresh lime juice
- 1 tablespoon chopped fresh cilantro
- ¼ teaspoon salt or to taste
- ¼ cup olive oil or vegetable oil
Instructies
- Put all of the ingredients, except the oil, in a blender.
- Blend until smooth.
- With the motor running, pour the oil through the lid opening and blend until emulsified.
- Adjust salt.
- Transfer to a jar.
- Cover and refrigerate up to 2 days.
