Chicken Breasts with Yucatán Green Seasoning Paste
Pechugas de Pollo al Recado BistekThis dish highlights one of Yucatán's most intriguing seasoning pastes called recado bistek, which is made by grinding together toasted garlic, onion, lots of black pepper, oregano, cloves, cinnamon, cumin, and dried chiles. The paste is moistened with orange juice and slathered all over boneless chicken breasts before grilling to produce chicken with flavor that really wakes up your taste buds.
