TelerasTeleras are flat, rectangular rolls that are common in central Mexico to use for tortas (sandwiches). At the Libertad Market in Guadalajara, vendors entice passerby with huge trays of freshly prepared tortas, made with teleras, ready to be purchased and eaten on the go. The tortas contained an assortment of layered fillings, such as refried beans, shredded chicken, pork, or beef, tomatoes, avocados, and lettuce, and salsa, mayonnaise, and pickled chiles. The teleras are made with the same dough as bolillos, except the rolls are shaped differently.
