Harvest Ham
This salty ham is full of flavor. Serve it with your favorite biscuits.

Instructies
Place ham in a very large container; cover with water, and soak at least 24 hours.
Pour off water.
Scrub ham with cold water, using a stiff brush, and rinse well.
Remove skin, leaving a ¼-inch layer of fat.
Score fat in a diamond design using a sharp knife.
Stud with whole cloves.
Place ham in a large roasting pan.
Combine brown sugar, mustard, honey, and ginger.
Coat exposed portion of ham evenly with mustard mixture.
Pour apple juice and pineapple juice into roasting pan.
Cover and bake at 350° for 2 hours.
Add Madeira, apricot halves, and raisins to pan.
Cover and bake 1½ more hours or until a meat thermometer inserted into thickest portion of ham registers 142°.
To serve, slice ham across the grain into thin slices.
