The most delightful fried almonds I ever savored were in Sevilla, where frying is the preferred method of preparation. Almond trees flourish in many parts of Spain, and almonds are a typical addition to any tapas spread. Some bars even offer them as a complimentary snack, knowing well that the saltiness will entice patrons to order more drinks.
4ouncesof blanched almondssuch as Spanish Marcona (approximately 1/3 cup)
Kosher salt or sea salt
Instructies
Heat at least 1/2 inch of oil in a small skillet over medium-high heat (or better yet, use a deep fryer set at 365°F or 185°C) until a cube of bread turns light brown in 60 seconds.
Carefully add the blanched almonds to the hot oil and fry them until they turn lightly golden, which should only take a few minutes.
Using a slotted spoon, remove the fried almonds from the oil and place them on paper towels to drain any excess oil.
While they are still hot, season them generously with salt.
Serve your Crispy Salted Fried Almonds as a delectable tapa or snack, perfect for pairing with your favorite drinks.
