Sugar-Topped Sweet Rolls These delightful sweet rolls, known as "Suizos," are a traditional addition to a continental breakfast served at Spanish hotels. Among all the sweet rolls I've had the pleasure of tasting, Suizos hold a special place as my favorite.

Instructies
Prepare the Dough:
Follow the steps 1 and 2 of the Sweet Filled Bread Rings recipe to prepare and knead the dough.
However, do not allow it to rise.
Divide and Shape the Dough:
Divide the dough into 12 equal pieces.
Shape each piece into an oval and make a lengthwise slit down the center.
Place these ovals on a cookie sheet and let them rise in a warm place (such as an oven turned off) for about 3 hours or until they've doubled in size.
Fill the slit in each roll with 1 teaspoon of sugar.
Baking and Serving:
Preheat the oven to 350°F.
Lightly beat the large egg and 1 teaspoon of water in a small bowl.
Brush this egg wash over the tops of the rolls, excluding the sugared part.
Bake for 10 to 15 minutes or until they are well browned.
Notes / Tips / Wine Advice:
Serve the Suizos warm, either fresh from the oven or reheated.
