Instructies
Preheat the oven to 375°F (190°C).
Pimiento Cheese Topping:
In a food processor, puree all topping ingredients except pimientos.
Transfer the mixture to a bowl and fold in the diced pimientos.
Crispy Bacon:
Arrange bacon on a slotted broiler pan or a wire rack set in a foil-lined baking sheet.
Bake until crisp, about 20 minutes.
Burgers:
In a bowl, season the ground meat with salt and pepper.
Mix in grated onion with juices and Worcestershire sauce.
Form into 4 patties, making the centers slightly thinner for even cooking.
Heat a large griddle or cast-iron skillet over medium-high to high heat.
Add oil to the pan and cook the patties, turning occasionally, for 7 to 9 minutes.
Assemble Burgers:
Build the burgers with bun bottoms, pickles, chopped onion, patties, pimiento cheese topping, crispy bacon, lettuce, tomato, and bun tops.
