Peel and core the Granny Smith apple, then slice it into about 16 slices.
In a skillet over medium heat, melt the butter.
Add the sliced apples and cook for about 7-8 minutes, stirring occasionally, until the slices soften.
Butter one side of each slice of bread.
On the non-buttered side of two slices of bread, arrange ¼ of the smoked Gouda cheese.
Spread half of the cooked apple slices on each slice of bread, then add the remaining cheese on top of the apples.
Top each sandwich with the remaining slices of bread, buttered side facing out.
Cook the sandwiches at 325°F for four minutes on each side.
