Instructions
Place the sourdough boule on a cutting board.
If necessary, trim its edges so it fits snugly within the air fryer basket.
Cut through the top of the bread in a crisscross pattern, spacing the cuts every ½ inch, being careful not to cut all the way through so the bread stays together.
In a mixing bowl, whisk together the olive oil, sherry vinegar, Worcestershire sauce, minced anchovies (if using), and minced garlic.
Season the dressing liberally with salt and pepper, whisking again to combine.
Drizzle the dressing evenly into all the grooves of the bread, working on the cutting board.
Sprinkle the bread evenly with grated smoked mozzarella followed by grated pecorino cheese.
Place the bread in the air fryer basket, tent with a round of aluminum foil, and cook at 310°F (154°C) for 12 minutes.
Uncover the bread and cook until the edges are toasted and the cheese is golden brown, about 8 minutes more.
Remove the bread from the air fryer and serve hot.

Switch It Up:
For a classic garlic bread, omit the sherry vinegar, Worcestershire sauce, and anchovies. Double up on the minced garlic. Optionally, add 1-2 tablespoons of melted butter to the olive oil-garlic mixture. Swap out the pecorino for parmesan or add up to 2 tablespoons grated parmesan to the mozzarella-pecorino topping.
