Slice the Swiss cheese into narrow slices as well.
Lay out an egg roll wrapper on a clean surface.
Moisten the edges with water to help seal them.
Place a layer of Swiss cheese on the wrapper, followed by a layer of corned beef or pastrami (or omit for vegetarian option), and then a layer of sauerkraut.
Starting from the corner closest to you, fold the wrapper over the filling.
Fold in the sides and continue rolling until it resembles an egg roll.
Lightly spray both sides of the egg roll with vegetable oil spray.
Place the egg rolls in the air fryer basket, leaving some space between them for even cooking.
Air fry at 200°C (400°F) for 7 minutes, then flip the egg rolls and air fry for an additional 7 minutes, or until crispy and golden brown.
Remove the egg rolls from the air fryer and serve hot with 1000 Island dressing for dipping.
