Instructies
In a large mixing bowl, combine the lean ground turkey, panko, finely chopped carrots, zucchini, onion, eggs, Italian seasoning, and sea salt.
Mix thoroughly until well combined.
Shape the mixture into 1-inch meatballs.
Heat the olive oil in a large skillet over medium heat.
Add the meatballs to the skillet and cook until browned, turning frequently, for about 7 minutes.
Add ½ cup of chicken broth to the skillet, cover, and reduce the heat to low.
Cook until the liquid is nearly absorbed, approximately 7 minutes.
Add the remaining ¼ cup of chicken broth and increase the heat to medium.
Cook uncovered until the liquid is fully absorbed.
Serve the meatballs as a healthy side dish or main course, and enjoy!
