Zesty Shrimp and Orzo Salad
Ingrediënten
- 1 ½ cups orzo pasta uncooked
- 1 cup asparagus trimmed and cut into bite-size pieces
- 1 cup cooked medium shrimp
- 3 green onions thinly sliced
- ½ cup fresh parsley chopped
- Italian salad dressing to taste
Instructies
- Cook the orzo according to package directions.
- Drain and rinse with cold water.
- Place the asparagus in a large saucepan of simmering water for 3 to 4 minutes.
- Drain and rinse with cold water.
- In a serving bowl, mix together the cooked orzo, blanched asparagus, cooked shrimp, sliced green onions, and chopped fresh parsley.
- Drizzle the salad with Italian salad dressing to taste.
- Toss the ingredients together until well mixed.
