Homemade Lemon Curd
Although lemon curd can be purchased jarred in most grocery stores, it can be easily made and is amazingly delicious. Combine 4 large egg yolks and ⅔ cup erythritol sweetener in a small pot over low heat. Whisk in ⅔ cup fresh lemon juice and 1 teaspoon fresh lemon zest. Slowly whisk in 3 ¾ tablespoons unsalted butter, ¾ tablespoon at a time. Stir continuously until combined and thickened. Strain through a sieve and store covered until ready to use for up to one week.
Taste a bite of vacation with this deliciously rich custard. The rum extract gives a little nod to the tropical coconut drink you’d have while sitting poolside.
If you really want a fresh vanilla punch with this cheesecake, use a fresh vanilla bean. As a simple substitution, you can use 2 teaspoons vanilla extract instead.
Key limes tend to be seasonal — if you can’t find any in the supermarket just substitute for half lime juice and half lemon juice. In fact, most any citrus fruit will yield a tasty treat — try blood oranges for an exotic twist.
