Crab-Stuffed Flounder

  • 1 celery rib chopped
  • 3 green onions chopped
  • 2 garlic cloves minced
  • ¼ cup olive oil
  • ½ pound fresh lump crabmeat drained
  • 1 cup soft breadcrumbs homemade
  • ½ cup grated Parmesan cheese
  • 1 plum tomato chopped
  • 1 large egg lightly beaten
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 6 4-ounce flounder fillets
  • ½ cup butter or margarine melted

Garnish:

  • lemon wedges

Instructies

  • Cook celery, green onions, and garlic in hot oil in a large skillet over medium-high heat, stirring constantly, 3 minutes or until tender.
  • Remove skillet from heat; add crabmeat and next 8 ingredients, stirring well.
  • Brush fillets evenly with melted butter.
  • Spoon 1 heaping tablespoon crabmeat mixture on top of each fillet.
  • Roll up fillets; secure each with a wooden pick.
  • Place fillets in a lightly greased 13- x 9- inch baking dish.
  • Spoon remaining crabmeat mixture over each stuffed fillet, and drizzle with any remaining butter.
  • Cover and bake at 375° for 20 minutes.
  • Uncover and bake for 10 more minutes or until fish flakes with a fork.
  • Garnish, if desired.
