Fried Sardines with Romesco Dipping Sauce
Sardines can have a bad reputation, but seriously, they taste amazing and are packed with omega-3s, vitamin D, protein and selenium. And as a bonus, they are economical and low in mercury and other metals commonly found in fish. Paired with the low-carb romesco sauce, this is one delicious meal!

- ½ cup crushed pork rinds
- 2 110 gram cans skinless, boneless sardines packed in oil, drained
- ½ cup warmed romesco sauce
Instructies
- Place ground pork rinds in a shallow dish.
- Roll sardines to coat with ground pork rinds.
- Place coated sardines in air fryer basket lightly greased with olive oil.
- Cook 3 minutes.
- Gently flip sardines and cook an additional 3 minutes.
- Transfer to a medium serving dish and serve warm with romesco sauce.
