Ingredients

  • Applewood chips 2 cups, soaked
  • Brown sugar 2 tbsp
  • Garlic cloves 2 minced
  • Halibut fillets 4, 6-oz each
  • Honey 2 tbsp
  • Rice vinegar 2 tbsp
  • Sesame oil 1 tbsp
  • Soy sauce 3 tbsp, gluten-free if needed
  • Fresh ginger 1 tbsp, grated
  • Black pepper 1/2 tsp

Instructions

  • Soak applewood chips in water for at least 30 minutes.
  • In a bowl, whisk together soy sauce, rice vinegar, honey, brown sugar, sesame oil, minced garlic, and grated ginger.
  • Place halibut fillets in a shallow dish and pour the marinade over them.
  • Let marinate for 30 minutes.
  • Preheat grill to medium-high heat.
  • Place soaked applewood chips in a smoker box or foil pouch on the grill.
  • Place halibut fillets on the grill, skin-side down if applicable.
  • Grill for 6-8 minutes per side, or until fish is cooked through and flakes easily.
  • Baste with remaining marinade during the last few minutes of grilling.
  • Remove from grill and serve immediately.
