Smoky Applewood Halibut with Asian Glaze
Flaky halibut grilled with smoky applewood, glazed with a savory oriental sauce.
Equipment
- Grill, Basting brush, Large bowl, Applewood chips (soaked)
Ingredients
- Applewood chips 2 cups, soaked
- Brown sugar 2 tbsp
- Garlic cloves 2 minced
- Halibut fillets 4, 6-oz each
- Honey 2 tbsp
- Rice vinegar 2 tbsp
- Sesame oil 1 tbsp
- Soy sauce 3 tbsp, gluten-free if needed
- Fresh ginger 1 tbsp, grated
- Black pepper 1/2 tsp
Instructions
- Soak applewood chips in water for at least 30 minutes.
- In a bowl, whisk together soy sauce, rice vinegar, honey, brown sugar, sesame oil, minced garlic, and grated ginger.
- Place halibut fillets in a shallow dish and pour the marinade over them.
- Let marinate for 30 minutes.
- Preheat grill to medium-high heat.
- Place soaked applewood chips in a smoker box or foil pouch on the grill.
- Place halibut fillets on the grill, skin-side down if applicable.
- Grill for 6-8 minutes per side, or until fish is cooked through and flakes easily.
- Baste with remaining marinade during the last few minutes of grilling.
- Remove from grill and serve immediately.
