Grilled Oyster Mushrooms with Olive Oil and Garlic
This straightforward tapa relies on the rich and earthy flavor of oyster mushrooms. It’s a quick and easy dish to prepare.

Yields 4 Servings
- 1 pound of oyster mushrooms rinsed, trimmed, and separated into individual “ears”
- 2 tablespoons of olive oil
- 2 garlic cloves finely chopped
- Kosher salt or sea salt
- 2 tablespoons of finely chopped fresh flat-leaf parsley
Instructies
- Heat a greased stovetop griddle over high heat.
- Reduce the heat to medium, and place the oyster mushrooms on the griddle.
- Drizzle them with olive oil and sprinkle the finely chopped garlic on top.
- Use the back of a pancake turner to gently press the mushrooms to flatten them.
- After a minute or so, flip the mushrooms, season them with salt, and continue cooking until they become tender.
- Once the mushrooms are done, sprinkle them with the finely chopped parsley, and serve the dish while it’s hot.
