  • 8 ounces low-fat smoked sausage cut into ÂĽ-inch slices
  • 1 small onion diced
  • 1 celery rib diced
  • 1 large green bell pepper cut into thin strips
  • 2 garlic cloves minced
  • 1 14½-ounce can diced tomatoes with garlic, basil, and oregano
  • 1 14-ounce can fat-free chicken broth
  • 1Âľ teaspoons Creole seasoning
  • â…› to ½ teaspoon ground red pepper
  • Âľ cup uncooked long-grain rice
  • 1 pound cooked medium shrimp peeled and deveined

Instructies

  • SautĂ© smoked sausage in a large nonstick skillet over medium-high heat 3 to 4 minutes or until browned.
  • Add onion and next 3 ingredients; sautĂ© 2 to 3 minutes.
  • Add tomatoes and next 3 ingredients.
  • Bring to a boil, and stir in rice; cover, reduce heat to low, and simmer 15 to 20 minutes or until liquid is absorbed.
  • Stir in shrimp, and cook 3 to 5 minutes or just until shrimp turn pink.
