Creamy Rosemary Harmony
Ingredients
- 50 g butter
- 4 sprigs of fresh rosemary
- 450 g leeks trimmed and finely sliced
- 700 g potatoes roughly chopped
- 900 ml vegetable stock
- 450 ml milk
- 2 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons crème fraîche
- Salt and ground black pepper
Instructions
Leek Prelude:
- In a large saucepan, melt the butter.
- Add the finely sliced leeks and sweat gently for 5 minutes, stirring frequently.
Herbaceous Infusion:
- Add the roughly chopped potatoes, vegetable stock, fresh rosemary sprigs, and milk to the saucepan.
- Bring the mixture to a boil, then reduce the heat, cover, and simmer gently for 20–25 minutes until the vegetables are tender.
- Remove from the heat.
Cool Interlude:
- Allow the mixture to cool for 10 minutes.
- Discard the rosemary sprigs.
Creamy Alchemy:
- Pour the mixture into a blender or food processor and purée until smooth.
Herbal & Creamy Finish:
- Return the purée to a clean pan.
- Stir in the chopped fresh flat-leaf parsley and crème fraîche.

Reheat & Revel:
- Gently reheat the soup and serve in warm bowls.
