Creamy Rosemary Harmony

Ingredients

  • 50 g butter
  • 4 sprigs of fresh rosemary
  • 450 g leeks trimmed and finely sliced
  • 700 g potatoes roughly chopped
  • 900 ml vegetable stock
  • 450 ml milk
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons crème fraîche
  • Salt and ground black pepper

Instructions

Leek Prelude:

  • In a large saucepan, melt the butter.
  • Add the finely sliced leeks and sweat gently for 5 minutes, stirring frequently.

Herbaceous Infusion:

  • Add the roughly chopped potatoes, vegetable stock, fresh rosemary sprigs, and milk to the saucepan.
  • Bring the mixture to a boil, then reduce the heat, cover, and simmer gently for 20–25 minutes until the vegetables are tender.
  • Remove from the heat.

Cool Interlude:

  • Allow the mixture to cool for 10 minutes.
  • Discard the rosemary sprigs.

Creamy Alchemy:

  • Pour the mixture into a blender or food processor and purée until smooth.

Herbal & Creamy Finish:

  • Return the purée to a clean pan.
  • Stir in the chopped fresh flat-leaf parsley and crème fraîche.
  • Season the Creamy Rosemary Harmony to taste.

Reheat & Revel:

  • Gently reheat the soup and serve in warm bowls.
