Grouper Mediterranean
Ingredients
Makes 6 servings
Prep: 15 min., Cook: 12 min., Bake: 23 min.
- 3 tablespoons olive oil divided
- ½ cup chopped onion
- 3 garlic cloves minced
- 1 28-ounce can crushed tomatoes, undrained
- ½ cup dry white wine
- ½ cup chopped fresh parsley
- ¼ cup capers drained
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh oregano
- ¼ teaspoon dried crushed red pepper
- 6 8-ounce grouper fillets (about ¾ inch thick)
- 2 tablespoons dry white wine
- 2 4-ounce packages crumbled feta cheese
Instructions
- Heat 2 tablespoons oil in a large skillet over medium-high heat.
- Add onion and garlic, and sauté 2 minutes.
- Add tomatoes and next 6 ingredients to skillet.
- Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes.
- Pour remaining oil into a 15- x 10-inch jelly-roll pan, and tilt to coat bottom.
- Place fish fillets in a single layer on pan.
- Pour tomato mixture over fish.
- Bake, uncovered, at 450° for 15 minutes.
- Drizzle with white wine.
- Sprinkle with cheese, and cook 8 more minutes or until cheese begins to melt.
