Ingredients
For the Marinade:
- 1 tablespoon black olives chopped
- ¼ cup dry white wine
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- 1 tablespoon parsley leaves chopped
- 1 tomato pureed
- ¼ cup fresh lemon juice
For the Roasted Snapper:
- 1 pound snapper fillets
- ½ cup cassava flour
- Salt to taste
- White pepper to taste
Instructions
- In a large ceramic bowl, combine all marinade ingredients.
- Add snapper fillets to the marinade and let them marinate for 1 hour in the refrigerator.
- On a tray, spread the cassava flour.
- Coat the marinated snapper fillets with the flour.
- Season the fillets with salt and pepper.
- Preheat the Air Fryer to 395°F (200°C).
- Place the fillets in the Air Fryer and cook for 10 minutes, basting with the marinade and flipping them halfway through.
