Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 celery sticks thinly sliced
  • 3 garlic cloves minced
  • 550 g canned cooked cannellini beans drained
  • 400 ml vegetable stock
  • 125 ml white wine
  • 3 sprigs of fresh rosemary
  • ¼ teaspoon ground white pepper
  • 100 g mozzarella cheese grated

Instructions

Aromatic Prelude:

  • Heat the olive oil in a large saucepan over medium-high heat.
  • Add chopped onion, thinly sliced celery, and minced garlic.
  • Sweat for 5 minutes until soft, stirring frequently.

  • Add the drained cannellini beans, vegetable stock, white wine, fresh rosemary sprigs, and ground white pepper.
  • Bring the mixture to a boil.
  • Reduce the heat, cover the pan, and simmer for 10–15 minutes.

  • Before serving, remove and discard the rosemary sprigs.
