Ingredients
- 1 tablespoon olive oil
- 1 onion chopped

- 550 g canned cooked cannellini beans drained
- 400 ml vegetable stock
- 125 ml white wine
- 3 sprigs of fresh rosemary
- ¼ teaspoon ground white pepper
- 100 g mozzarella cheese grated
Instructions

- Heat the olive oil in a large saucepan over medium-high heat.
- Add chopped onion, thinly sliced celery, and minced garlic.
- Sweat for 5 minutes until soft, stirring frequently.

- Add the drained cannellini beans, vegetable stock, white wine, fresh rosemary sprigs, and ground white pepper.
- Bring the mixture to a boil.
- Reduce the heat, cover the pan, and simmer for 10–15 minutes.

- Before serving, remove and discard the rosemary sprigs.

- Top each serving with a sprinkle of grated mozzarella cheese.
