Scallops in Tomato Sauce
Dazzle with this gourmet dish at dinner during special occasions or just as a pick-me-up during the middle of the week.
Ingredients
- 1 onion diced
- 1 tablespoon of garlic minced
- 3 cups tomatoes diced
- 8 ounce can of tomato sauce
- 8 ounce can of tomato paste
- ½ cup of red wine
- 1 teaspoon of dried oregano
- 2 teaspoons of dried parsley
- 2 pounds of fresh scallops
Instructions
- Grease the slow cooker insert.
- Add the onion, tomatoes, tomato sauce and paste, wine, and herbs to the insert.
- Cover and cook on low for seven hours.
- Turn the slow cooker temperature to high and add the scallops.
- Cover and cook for an additional 15 minutes.
